What you need (serves 2)
- 1 cup whole rolled oats (جئی) — not instant sachets; whole rolled oats hold their bite
- 1 tbsp desi ghee (or oil)
- 1 tsp cumin seeds (زیرہ)
- 1 small onion, finely chopped
- 1 small tomato, chopped
- 1 green chilli, slit — or ½ tsp crushed red chilli (لال مرچ)
- ½ cup mixed vegetables — carrot, cabbage, peas, whatever the fridge offers
- ¼ tsp turmeric, ½ tsp coriander powder, a pinch of garam masala
- Salt to taste
- 2 to 2½ cups water (or thin chicken yakhni for the full version)
- Optional, and worth it: shredded cooked chicken — a handful
- Fresh coriander and a squeeze of lemon to finish
The from-scratch method (15 minutes)
- Toast the oats dry in the empty pan for 2 minutes on medium heat until they smell faintly nutty. This single step is why homemade masala oats taste rich instead of gluey — most recipes skip it. Set them aside.
- Build the tarka. Heat the ghee, crackle the cumin seeds, then soften the onion until its edges turn golden.
- Add tomato, chilli and the powdered spices. Cook until the tomato collapses and the ghee separates at the edges — the masala is ready when it looks like the start of any good salan.
- Vegetables in. Two minutes, just until they brighten.
- Chicken, if using — stir the shredded chicken through the masala so it picks up the spice before any liquid arrives.
- Oats and water. Return the toasted oats, pour the water (or yakhni), and simmer 4–5 minutes, stirring now and then, until the oats are tender but not dissolved. You want a porridge with personality — thick enough to hold a spoon at a slant.
- Finish with fresh coriander and lemon. Eat hot — savoury oats wait for no one.
The jar method — the same bowl, in 3 minutes

- Tip 4–5 heaped tablespoons (about 40g) into a bowl.
- Pour over a cup of hot water — or hot milk for a creamier bowl — and stir once.
- Rest three to four minutes, stir again, and eat.
