If the subcontinent has a royal nut, it is badam. Almond Talbeena folds about 126 almonds into every kilo — 120 grams of badam in our barley talbeena, 30 whole-food ingredients naturally sweetened with dates, figs, raisins, a touch of raw honey and a little gur. No refined white sugar.
Talbeena’s story begins in the hadith: in a narration of Aisha (RA), the Prophet ﷺ described it as a dish that soothes the heart and eases some of its sorrow (Sahih al-Bukhari 5417 · Sahih Muslim 2216). And badam carries its own tradition — the nut our mothers ground into doodh and halwa whenever someone needed looking after.
It begins where talbeena always has: whole barley, stone-milled and slow-roasted the traditional way, with semolina, sago and roasted chickpeas for a warm, comforting base — then the generous hand of almonds, joined by pistachios, cashews, walnuts, peanuts and coconut, and a full spread of seeds: pumpkin, sesame, watermelon, melon, poppy, kalonji (nigella) and fennel.
Soothing gond katira, phulai and kikar gums and ispaghol (psyllium) — traditionally added for easy digestion — meet a touch of desi ghee for richness and a breath of cardamom and cinnamon, the classic perfume of badam doodh. Almonds bring their vitamin E naturally; the bowl brings the comfort.
